Recipe: Coconut Chicken Thai inspired Curry
Welcome back everyone!
In search of a new savoury recipe? This Chicken Coconut Thai Curry is one of my favourites! It's great for lunch, dinner, and I personally love having the leftovers for breakfast. It's got some spice, lots of flavour, protein and lots of veggies. What's not to love?
Let's get to it....
Tools you will need:
-A stove
-Medium to large sized pot
-Can opener
-Measuring cups & spoons
-Mixing spoon
-A cutting knife and cutting board
Ingredients you will need:
-1 tbsp coconut oil
-2-3 tbsp red curry paste
-1 clove garlic
-1 tsp grated ginger
-1 14 oz can coconut milk
-1/4 cup chicken broth
-2 tbsp fish sauce
-1 tbsp coconut sugar
-1 tbsp lime juice (I used one whole small lime)
-4 Lime leaves (bruised)
-1 lemon grass stalk (bruised)
-1 lb of chicken breast sliced
-1 red bell pepper (diced or sliced)
-1 orange bell pepper (diced or sliced)
-1/2 cup sliced carrots
-1/2 cubed Onion
-1/2 cup bamboo shoots
-About 1/2 cup fresh or frozen peas
-Salt to taste (depending on sodium content of chicken broth and curry paste)
Instructions:
1) Turn stove to medium heat
2) Melt coconut oil
3) Saute garlic, ginger, onion until transparent (about 3-5 minutes)
4) Add in curry paste and mix well
5) Add in chicken, coconut milk, chicken broth, lime leaves, lemon grass stalk and fish sauce
6) Stir well
7) Bring to a simmer, still on medium heat. Reduce heat to create a gentle simmer until chicken is fully cooked.
8) Once the chicken is no longer pink*, add in the lime juice, coconut sugar, bell peppers,
carrots, and bamboo shoots.
9) Stir well and allow vegetables to cook until crisp-tender.
10) Remove lime leaves and lemon grass stalk
11) Remove from heat
12) Add in peas
13) Serve with rice (jasmine is best)
14) Enjoy! :)
*The chicken took about 10 minutes, I simply removed a couple pieces and sliced them to check if they were still pink
Other options to try:
-Replace rice for cauliflower rice -Add in or swap veggies - zucchini is a great option
-If you are vegan or vegetarian skip the fish sauce and chicken. Try it with tofu or just more veg!
