Recipe: Autumn Inspired Oatmeal
This Autumn has been such a fresh, and comforting one. The leaves are all kinds of beautiful, and the sun has been out to play more times than I expected. Even so, there is a chill in the air, which has led me to crave oats again! Warm and cozy, topped with an arrangement of textures and flavours. Slightly sweetened, and most of all, nourishing.
If you are familiar with Ayurveda, you know fall is the time of Vata. Whirling, shedding, cool, rough. These oats are the perfect meal to warm, and calm vata.
As you will see in the recipe, I love adding in eggs, and an arrangement of nuts. They are such an easy, sneaky, and of course yummy addition that will provide you with quality protein, and fats. You will feel fully nourished, and satisfied for a longer period of time.
Let's get started...
Base Ingredients:
-1/3 cup steel cut oats
-3/4 cup almond milk
-2 eggs
-1 tbsp chia seeds
-1/2 tsp pumpkin spice blend, or to taste
pinch of salt
Steps:
*I generally use the microwave, but feel free to do this stove top if you personally don't use a microwave
-Mix all base ingredients really well
-Microwave for 3 minutes (or use stove top)
-Mix again really well
-Add toppings!
Toppings I used:
-Unsweetened shredded coconut
-Pumpkin seeds
-Pecans
-Goji berries
-Chocolate chips (I use these)
-1-2 tsp maple syrup drizzled on top
-Extra cinnamon
Other Ideas:
*If you don't have all these ingredients, play around with what you have! Here are some other yummy things I like to add
-You can use quick oats if you don't have steel-cut. I use steel cut because they have a lower glycemic index, slowing down the sugar release, keeping me satisfied longer.
-Use fresh berries , cooked apples, or raisins if you don't have goji berries
-Almonds or walnuts instead of pecans
-Use just chia seeds instead of eggs if you eat an animal product free diet
-Try honey instead of maple syrup - or no sweetener at all! Sometimes I just use a couple chocolate chips as sweetener, or fresh berries.
