Recipe: Oatmeal Chocolate Chip Cookies (vegan, gluten free, low sugar, low carb)


I have been on a serious cookie kick lately, so I wanted to create a classic oatmeal chocolate chip cookie - my favorite kind of cookie! This recipe is vegan, gluten free, and can be adjusted to be low-carb, or even keto. Let's just jump right into the recipe!

Yields around 12 cookies (size I made shown in picture above)

Tools you will need:

-An oven preheated to 375°F

-A bowl with something to mix everything together (a whisk will do) or a mixer if you have one.

-Measuring cups & spoons

-A bowl for your chia eggs

-A baking sheet lined with parchment paper

Ingredients you will need:

-2 chia eggs (2 tbsp chia seeds + 6 tbsp water)

-1/4 cup coconut oil

-1 tsp vanilla extract

-2 tbsp almond butter

-2 tbsp maple syrup

-2 tsp granulated stevia

-1/4 tsp salt

-1/2 tsp baking soda

-1 cup almond flour

-1/4 cup coconut flour

-1/4 cup oats

-chocolate chips of choice (I used these, and about 2 tbsp)

Cookie creating steps:

1) Have your oven preheated!

2) Make your chia eggs by combining the chia seeds with the water, and letting sit in the fridge for about 5 minutes

3) In a large bowl, or your mixer, mix chia eggs, coconut oil, vanilla extract, almond butter, maple syrup, and stevia

4) Add in salt, baking soda, almond flour, coconut flour, and oats. Mix.

*You may need more or less coconut flour depending on consistency; if very sticky add a bit more, but do this slowly

5) Mix in chocolate chips with hands

6) Shape balls of dough

7) Flatten slightly on parchment paper lined cookie sheet

8) Bake for about 20 minutes

9) Allow to cool for 5-10 minutes

Other ideas:

-Use eggs instead of chia eggs

-Try butter or ghee instead of coconut oil

-Try cocao chips, or carob chips instead of regular chocolate chips.

-For low carb, or even keto you can: use less maple syrup, and more stevia. Replace oats with more coconut flour. Use sugar free chocolate chips, or less, or darker chocolate.
